At least once a week, I make some homemade Paleo ice cream for my kids for summer weekend snacks or healthy desserts. Homemade paleo ice cream is incredibly tasty and healthy because you get to add your desired ingredients like protein, vitamins, as well as antioxidants. Dairy-Free Raspberries Chocolate-Chip Ice Cream Recipe
Among all the paleo ice cream recipes I have tried, I would say this Dairy-free raspberries chocolate-chip ice cream recipe is my personal favorite. The kids love it too. It’s really tasty and healthy.
- 5 oz full-fat coconut milk
- Half a pint fresh raspberries
- 1 teaspoon vanilla
- A quarter cup raw honey
- A third cup dark mini chocolate chips
- 2 tablespoons freshly squeezed lemon juice
- Half large, ripe banana- mashed
Yields: One and a half pints
- In a medium-sized saucepan, simmer honey, raspberries, and lemon juice over medium heat, stirring occasionally for about 20 minutes.
- Remove mixture from heat and strain through a mesh strainer and discard the pulp.
- Place mixture in a fridge to cool.
- In a small mixing bowl, combine mashed banana, coconut milk, and vanilla.
- Add the cooled berry mixture and thoroughly combine.
- Pour mixture into electric ice cream maker. Churn until the mixture starts to freeze.
- Sprinkle the chocolate chips during the last 5 minutes of churning in the appliance.
- Either serve in bowls or pack in ice cream containers and freeze.
Chocolate Banana Ice Cream
My kids love chocolate and therefore I always try to find the most creative ways to include it in their diet. I find adding chocolate to my homemade paleo ice creams much more creative because the kids love ice cream even more. It’s all healthy – no processed foods or dairy added. And the good thing is that you don’t need to have an ice cream maker – a blender or food processor will do the job just fine.
- A quarter cup cocoa powder
- 3 medium bananas, frozen and sliced
- 1 ripe avocado
- 1 teaspoon agave syrup or Stevia, optional
- Use a blender to blend the frozen banana and avocado until smooth. You can use a food processor as well.
- Add the cocoa powder and agave syrup or stevia and blend until well incorporated.
- Pour mixture into a container and place in a freezer. Stir gently with a fork every 30 minutes to break up large ice particles. Repeat at least 4 times.
- Serve in a bowls or pack in small ice cream containers for your kids weekend snack.
Balsamic Strawberry & Basil Dairy-Free Ice Cream
- 2 cans full-fat coconut milk, chilled overnight
- 1 batch roasted balsamic strawberries
- 2 handful fresh basil leaves
- A third cup maple syrup
- Pour all the ingredients into a blender and process until the mixture is smooth and creamy.
- Transfer the mixture to an electric ice cream maker and churn until it starts to freeze.
- Place in the freezer to allow it firm up – stir every 30 minutes to break up large ice particles.
The strawberry-basil flavor might seem a little strange, but it’s actually incredible. I have tried it and trust me, your kids will thoroughly enjoy this antioxidant-rich ice cream.
