As a busy working mom, dinner can sometimes be an oversight and we just throw together whatever leftovers we have and call it good. It is a constant battle of shopping list vs. meal plan and planning ahead for the week’s meals. Then, of course, comes the cooking part. The dreaded “When will dinner be ready?” question.

It doesn’t have to be this way. Finding a few quick and easy meals are an absolute must in your working mom toolbelt. Today I’m sharing this super quick meal idea using Ready.Chef.Go! Cooking Bags.

I love the idea of steaming something quickly in the microwave because that’s about as convenient as cooking gets! I often steam up some veggies for my child that way, so why not prepare a full dinner?

For this meal, we decided to cook some yummy tilapia (because we haven’t been eating enough fish lately) with a side of green beans. I also later steamed up a sweet potato to add a little more bulk to the meal, especially for the picky toddler. I focused on the tilapia portion of the meal for the photos because the adult plate is prettier to photograph than the toddler’s plate.

I do love some lemon-flavored tilapia. The great thing about this fish is it doesn’t require a lot of seasoning. We added some Greek seasoning, just a little bit, to give it some yummy flavor and to mix with the lemon while steaming.

When we had our fish fillets ready to go, we gently placed them inside the bags and got them ready to microwave.

I added some of the green beans into this bag, again for added flavor. The rest went in a separate bag with the sweet potato (not pictured).

The best part was the timing. We microwaved for like 5 minutes. That’s it! Then we took out this yummy plate with the juicy steamed tilapia, lemons, and green beans. Looks great right? Now check it out on a plate!

  1. Such an easy meal to prepare. I can’t eat fish but my family does and I prepare it at least once a week so always looking for new recipes. Especially during the warm summer months.
