Healthy Toddler Breakfast: Eggs and Spinach

Today I’m sharing a quick tip with you on how I make a healthy breakfast for my toddler.

My toddler is a very picky eater, so most of the time the food I try to have him try ends up tossed to the floor, for the dogs to enjoy. I do want my little guy to eat some veggies, so I’ve tried mixing them in his food that I know he will eat. Baby H loves scrambled eggs, so I wanted to mix in some veggies while cooking them. I first tried cutting up spinach into tiny pieces and cooking it in, but my smarty pants just picked it out.

So, blender to the rescue. I’ve started blending a bunch of spinach and/or kale together, and one blender-full makes several batches that I store in baby food jars. Then, I stir in one baby food jar when making some scrambled eggs and freeze the rest for later.

I start cooking the eggs and then dump in the blended spinach to cook into the eggs.

See? The eggs are a bit green (Green Eggs and Ham anyone?) and are yummy and healthy. Hey, sometimes you just gotta hide the veggies in plain sight.

I like to cook up a big batch Sunday night so it will last most of the week. You gotta simplify things and cook in bulk when you’re a working mom.

  2. Excellent idea! Gotta love the doggie vacuum cleaner. Jessica Seinfeld has a book titled “Deceptively Delicious” that has a lot of sneaky recipes to get veggies into picky eaters – highly recommended.

  3. That’s a great idea! When my son goes through his picky phases, I slip him bites in the kitchen while I’m cooking. He’ll eat an entire meal that way, but not at the table from his plate. Go figure.

    • I’ve had to eat at the coffee table and have my toddler take bites off my plate as he runs around me. Whatever we gotta do to make them eat haha
